Rinse and soak corn husk overnight,
For the liquid added to the masa, I add 14 cups of the broth where the meat cooked and 2 cups of regular water!
Ingredients: makes 80-100 tamales
For my filling
10 lbs beef or pork ( I used beef chuck tender roast, beef chuck pot roast and short ribs) boil with 1 onion, head of garlic, 5 bay leaves and 1/4 cup salt
35 New Mexico or guajillo chile pods
6 chile anchos
15 tomatillos
12 garlic cloves
1 1/2 tsp cumin seeds
Salt to taste I used 5 tsp
5-6 cups of broth
For my masa
4..4 lbs Maseca for tamales( brown bag)
24 oz lard or vegetable shortening
3 tbsp plus 1 tsp baking powder
1 tbsp plus 1 tsp salt
16 cups broth(skim the top to remove excess fat)
1 serving of love 💕

Claudia how do I get the pot ready for the tamales 🫔 😅 how much water do I add to my pot or how big of a pot do they go in does that matter or a certain size 😅
HI from New Zealand, I have made your previous versions and they were awesome, just wondering if you have any ideas on alternatives to corn husks, they are not as common here and abit more pricey , keen on alternatives

Any advice on why my sauce is coming out bitter it tastes like I added lemon juice. I've tried making it a couple of times adjusting things, but it's still bitter 😢

1:51 Nooo she didn’t strain the chile. Remember to pass your chile through a sieve y’all. It’ll take out some of the rougher skins of the chiles. This goes double if your blender isn’t super duper sharp or powerful.
