Keto Stuffed Bell Peppers
Ingredients:
✓ 4 bell peppers, tops cut off and seeds removed
✓ 1 lb ground beef
✓ 1/2 cup diced tomatoes
✓ 1/2 cup cauliflower rice
✓ 1/4 cup shredded mozzarella cheese
✓ 1/4 cup chopped onions
✓ 2 cloves garlic, minced
✓ 1 tablespoon olive oil
✓ Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened. Add the ground beef to the skillet and cook until browned. Drain any excess fat. Stir in the diced tomatoes and cauliflower rice. Season with salt and pepper. Stuff the bell peppers with the beef mixture and place them in a baking dish. Top each stuffed bell pepper with shredded mozzarella cheese. Bake for 25-30 minutes, or until the bell peppers are tender and the cheese is melted and bubbly. Serve hot and enjoy this tasty keto dinner!
