Ingredients:

4 large Italian sausages, chopped into bit size chunks
1 tablespoon Olive oil for cooking
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 medium onion, sliced
4 cloves chopped garlic
2 teaspoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1⁄2 teaspoon chili flakes
1 tablespoon tomato paste
1 medium can of diced tomatoes (I use olive and garlic, but use the tomatoes of your choice.)

  1. I've made this for years and love it. Hubby liked it over rice in a bowl, and I still eat it that way. Too old to change, but over pasta … hmmm … I'll have to try that.

  3. Oh my gosh! Sausage and peppers is one of my absolute favorite meals. I raised my kids on it as well, and one of my daughters still loves it to this day. That's my special meal I make for her when she wants it. I have never used the tomato paste, but I have used the tomatoes. I'll have to try it with the tomato paste.

  6. I like to put the Tomatoes in a dutch oven, let them simmer for 45 minutes, then in a skillet fry off the Sausage, Onion, Garlic, and Peppers then add them to the Tomatoes. To serve without pasta Constantine would roll over in his grave, actually that is not quite true. Pasta only became popular after Mussolini banned Pasta during WWII, the Italians all started eating Pasta to protest against Mussolini.

  7. Hey Dave. I made this with some slight changes out of necessity. I live in a very remote Australian town & the local store's Italian sausage is a bit meh. When I want that taste, I remove beef sausage from the casings, add my own seasoning to my taste & let sit overnight in the fridge. Then I roll into small meatballs to fry up. Works out quite tasty. While digging, I found a lone chicken breast. Decided to dice it up into same size as my meatballs & marinated it in the same herbs & spices. Also noticed 3 soon to expire mushrooms in the fridge so diced those up to. Then made the dish like you. It was absolutely delicious. Italian sausage & peppers is something I hadn't eaten since leaving the states years & years ago. Eating this brought back some great family memories. Just wanted to say thanks. ✌️❤️😘

  8. turned out great. I threw in a tbsp of red wine vinegar before some broth. Then i removed the sausage casing and sliced them up before i tossed them in for that last simmer. ended up sweeter then i thought but i will definitely do it again.

  10. Dear Chef John. I love this recipe and planning to make the dish ahead of the day I will serve it. We are having a family gathering one week-end in August. I will serve the dish with rigatoni and also with buns for the younger generation that might enjoy a good sausage sandwich. Guests will have the choice. Thank you, Merci bien.

  11. Thank you! I've made this many many times! However, I haven't made it in a long time & my memory is getting old. I have a refrigerator full of fresh Italian sausages, & a bunch of fresh peppers & a sweet onion & I was ready to cook when I realized that I couldn't remember what to cook first: The veggies or the sausage. Your lovely quick video reminded me! What I love to do with this meal is to pile it high on a grilled Hoagie roll, drape the sausage mix with a slice of Provolone cheese, put it under the broiler & close up the sandwich & dream about my past in NY City where I'd stop at the corner shop & buy one of these for lunch, wrapped in foil. Eat half for lunch & take the rest home for dinner. Thanks for helping me access my happy memories! (And my delinquent old memory!)
