Vegan Chili Recipe



High Protein Vegan Chili Recipe:

Ingredients:

– 100g TVP aka textured soy/vegetable protein, soaked in boiled water with stock cubes (I used 2 ā€œbeefā€ stock cubes)
– 1 onion, finely chopped (I used a red onion)
– 4 large carrots, chopped
– 3 tins of beans, rinsed and drained except the baked beans (I used 1 tin of baked beans, 1 tin of black beans, and 1 tin of kidney or chili beans)
– 1 tin of diced or crushed tomatoes
– 1/2 packet of nacho/taco/fajita seasoning mix
– 1 tbsp smoked paprika
– 200g of precooked rice

Directions:

1. Add your onion and carrots to a large pan with a lid and cook on medium heat, (add small splashes of water to prevent sticking).
2. Once the onion and carrots are mostly cooked through add your beans, tomatoes, TVP, and seasonings and give it a stir.
3. Cook this out for about 15-20 minutes stirring frequently. In the last few minutes stir in your rice.
4. Serve with some air fried potatoes cut into fries and more veggies. It’s also awesome with my Chipotle Cashew Dressing on top which was in a recent reel!

  1. Im mostly vegan. Trying to cut calories but not seeing weightloss. I lift weights. Put on muscle easily but literally cannot lose weight no matter what
