How to cook Nigerian Jollof
Rice.

List of ingredients

To cook the chicken
1 Old layer chicken
1/2 chopped onion
2 1 bunch fresh thyme
1 teaspoon curry
4 garlic
Thumb sized ginger
4 cups water
2 cups of oil ( for frying)

For the stew base
3 large res bell peppers
4 plum tomatoes
4 scotch bonnets ( or as preferred)
4 mini bullet peppers ( I had to come up with this name , LOL )
1 purple onion
1/2 cup of oil ( use the oil from the one you used to fry the chicken )
1 small tin tomatoes ( 150g )
1/2 teaspoon dry thyme
3 small bay leaf
1 seasoning

4 cups of rice
3 cups. ( I used basmati)
1 stick of butter
1/4 sliced onion
1 plum tomato
2 teaspoons all purpose seasoning

  4. Too bad I did not see this video before I started cooking…😢😢
    I blended my onion, 10, yes 10 red bell peppers plus purple onion, tomatoes and ginger, raw. Then, I followed the steps of frying the tomato paste, adding mixture and seasonings, and reduced it.
    I will add the rice, broth and mixture on Dec 25th. Please pray this turns out. 🙏 😢 it is my first try.

  8. She is a professional. Has anyone noticed how food refuses to burn or come out bad when a pro is cooking, it must know who is cooking! If it was me the rice would have burnt both itself and the house too.. And after everything else has burned down, the tomato and pepper mix will still be as raw and sour as when it was bought from the market.. But I won't let this stop me 😂
