ROASTED RED PEPPER HUMMUS 🔴 🥙
Quick and easy hummus blended with roasted red peppers for that smokey and sweet twist.

Ingredients:
– 2 Red bell peppers
– 1 Tin chickpeas or 250g (1.5cups) cooked chickpeas
– 60 ml Lemon juice (~1 large lemon)
– 60 ml (1/4 cup) Tahini (sesame paste)
– 2 Garlic cloves (minced)
– 2 tbsp Extra virgin olive oil
– 1/2 tsp Ground cumin
– Pinch cayenne pepper
– Salt to taste
1. Preheat oven to 220C/430F.
2. Slice red pepper on half, place on baking tray, drizzle and drizzle with olive oil.
3. Bake for 20 minutes.
4. In a food processor, add lemon juice, tahini, olive oil, garlic, cumin and cayenne pepper. Blend for 1-2 minutes till light and fluffy.
5. Add chickpeas, roasted red pepper and salt and blend for further 1-2 minutes.
6. Add a few tsps of ice cold water to thin down if preferred. And adjust salt to taste. 7. Enjoy 🙂
