One day, as I was eating a burrito and a few American-style beef tacos made from a classic at-home DIY kit, I was inspired to give all the flavors of the Old El Paso the chili treatment. The result is Tex-Mex Chili, where arroz amarillo (yellow rice) is what gives the chili its rich, thick texture, almost serving as a Tex-Mex porridge of sorts. Of course, it’s loaded with meat (but you can use plant-based), beans, diced tomatoes, and taco seasoning. The end result is a tasty fiesta where you can enjoy it in a bowl topped off with some sour cream, guacamole, shredded cheese, and/or tortilla strips. Or spoon some into tortillas and make roll-ups or serve over chips and enjoy the ultimate nachos! Any way you have it, it’s the perfect recipe to serve your loved ones any time of the year.

I'd not seen the BTB Chipotle but am going to the store ot look for it plus the rest of the ingredients to make this tonight! I'm the Take-Out Queen, but your excellent recipes are on this otherwise reluctant cook's table at least once every 14 days. Do you have to use the arroz amarillo rice? Or can you sub in other kinds of rice? Would a jasmine or basmati alter the cooking time/procedure in any significant way?

Yum, looks great. There's a strangely named spice blend from the deep south we like as well, Slap Ya Mama (get the mild or medium one, the hottest one will take the top of your head off). It's great in spite of it's name.

Luckily I found the Chipotle Better than Bullion at my local Fresh Market. I was going to order it online but can’t wait that long to try this. It looks amazing. I’m going to the grocery store now to get the other ingredients. I made your Short Rib Chili last week and it’s hard to top that.
