PAPA FRANK’S CHILI RECIPE
Cooking time / 60 minutes
Serves 4-6
Ingredients-
-extra virgin olive oil (at least 3 tbsp)
-1 yellow onion, chopped
-1 red bell pepper, chopped
-1 jalapeño, chopped
-2 pounds ground beef
-1 14.5oz can of fire roasted tomatoes
-1 8oz can of tomato sauce
-1 14.5oz can of pinto beans
-1 14.5oz can of kidney beans
-2 tsp garlic powder
-2 tsp dry oregano
-1 tsp cumin
-1 tsp paprika
-3 tbsp chili powder
-2 tsp salt
-1 tsp crushed black pepper
-1 cup of water
Optional-
-Cilantro and shredded cheddar cheese to top it off at the end.
Directions-
1. Heat oil in a large pot. Add onion, bell pepper, and jalapeño. Sauté until tender.
2. Add ground beef and cook until brown, stirring occasionally. Then add the garlic powder, oregano, cumin, paprika, and chili powder. Mix well.
3. Add fire roasted tomatoes, tomato sauce, beans, and one cup of water. Mix well. Add salt and pepper to taste. Turn heat down to low, cover, and simmer for 45 minutes.
4. You’re done! Serve with cornbread or steamed white rice. Garnish with fresh cilantro and shredded cheddar cheese.
