That’s right, we’re opening up the recipe book and diving deep into one of my absolute favorite recipes today! Tried & true, made well over 100 times for friends and family alike, this is my world famous vegetarian chili recipe. It’s winter time now and that means its time for a hearty meal & one of the best hearty meals I can think of is a nice steaming bowl of chili! Nothing says warming up on a cold January night like an easy chili recipe you can whip up & warm up with in no time. You see, to me, chili is a nice snack, an appetizer if you will. So as usual, I like to make it a whole meal by turning it into the best grilled cheese sandwich ever, the chili grilled cheese! Just make your favorite grilled cheese sandwich, how ever you want, then smother that bad boy with however many ladle-fulls of my vegetarian chili you desire. Stab it with a knife & grab a fork, because you’re going to need it. Trust me on this one guys, this will be your go to vegetarian chili recipe when you’re done, I promise. Happy Eating!

INGREDIENTS:
– 2 TBL Spoon Cooking Oil
– 1 White Onion Diced
– 1 Red Bell Pepper Diced
– 1 Green Bell Pepper Diced
– 1 Zucchini Halved and Thinly sliced
– 3 Cloves of Garlic Minced
– 1 15.5 oz can Black Beans
– 1 15.5 oz can Red Kidney Beans
– 1 15.5 oz can Great Northern Beans
– 1 15.5 oz can Garbanzo Beans
– 1 26 oz can Whole Tomatillos
– 1 15.5 oz can of Tomato Sauce
– .25 cup bbq sauce
– 1 cup of Beer
– 1 cup of Veggie Stock

SEASONING MIX 1:
– 1.5 tsp Cumin
– 1.5 tsp Chili Powder
– 1 tsp Salt
– .5 tsp White Pepper
– .25 tsp Crushed Red Pepper

SEASONING MIX 2:
– 1.5 tsp Cumin
– 1.5 tsp Chili Powder
– 1 tsp Salt
– .5 tsp Black Pepper
– .25 tsp Crushed Red Pepper

DIRECTIONS:
1.) Prep Veggies as noted above
2.) Drain & Rinse Beans and Tomatillos
3.) Prep both seasoning mixes separately, you will use them at different times
4.) Heat oil over medium high heat.
5.) Add onions & garlic and Saute for about 5 minutes, until aromatic
6.) Add peppers & zucc’s cook for 3 min
7.) Add Seasoning Mix 1, stir together & allow to cook for 5 more minutes
8.) Add beer to deglaze, allow to simmer and have alcohol cook off, about 5-7 minutes
9.) Add Beans & Tomatillos, stir together
10.) Add veggie stock, bbq sauce & can of tomato sauce & bring to boil
11.) Once boiling cover & reduce heat to low & allow to simmer for 30 minutes minimum
12.) After 30 minutes, uncover, stir & taste test. Should need more flavor, if not skip next step, if so then…
13.) Add Seasoning Mix 2, stir together and allow to simmer & reduce for 15 more minutes minimum.
14.) Serve in a bowl with your favorite chili toppings!

There you have it! The absolute best vegetarian chili recipe on planet Earth! If you wanna take it a step further like I did, of course you do, then make your favorite grilled cheese sandwich.. (Mine is just a standard tomato & bacon with American cheese and a little shredded cheddar) ..put it on a plate and just smother that bad boy with Onion Mike’s Vegetarian Chili.
