Ingredients

For the Rice:

1 cup basmati rice (soaked for 15 minutes)
Water (for boiling the rice)

For the Paneer:

200 grams paneer (cut into cubes)
2 tablespoons oil or ghee (for frying paneer)

1 medium onion (sliced)
1 medium carrot (diced)
1 small capsicum (diced)
( you can ad more veggies of your choice – cauliflower, beans, green peas etc)
1 teaspoon ginger-garlic paste
1 teaspoon jeera (cumin seeds)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 teaspoon for pulao or biryani masala
Salt (to taste)
Juice of 1/2 a lemon
Ghee (optional, for garnishing)
Raita (optional, for serving)

Step 1: Prep the Rice
Start by soaking 1 cup of rice for 15 minutes. While the rice soaks, use this time to prep your vegetables. Dice up some onions, carrots, and capsicum for a colorful and nutritious touch. Once the rice is soaked, cook it in boiling water until it’s perfectly tender. Strain the rice and set it aside for later.

Step 2: Fry the Paneer
Now, heat some oil or ghee in a kadhai (or any deep pan) and add paneer cubes. Lightly fry the paneer until they’re golden on all sides, then remove them from the pan and keep them aside.

Step 3: Cook the Veggies
In the same pan, add a little more oil or ghee, followed by jeera (cumin seeds) and ginger-garlic paste. SautĆ© for about a minute until fragrant. Next, toss in the chopped onions, carrots, and capsicum. SautĆ© the veggies until they’re cooked but still slightly crisp to maintain their crunch.

Step 4: Spice It Up
Time to add the spices! Sprinkle in your choice of basic spices like turmeric, red chili powder, garam masala, and any other favorites you enjoy. Stir well to coat the veggies evenly in the spices.

Step 5: Combine Everything
Add salt to taste, then gently mix in the cooked rice. Toss everything together until the rice is evenly coated in the spices and veggies. Now, add back the fried paneer cubes, mix once more, and cover the pan. Let it cook on low heat for 1-2 minutes to allow the flavors to meld together.

Step 6: Final Touch
Switch off the gas and squeeze in some fresh lemon juice for a zesty twist. Mix everything well and your Paneer Pulao is ready to serve!

Serve & Enjoy
