~ Honey soy pan seared tuna steaks, coconut milk rice & garlic tamari tenderstem (serves 2)

HONEY & SOY TUNA
2 x tuna steaks (I used yellowfin)
1.5 tbsp. extra virgin olive oil
1 tbsp. tamari
1/2 tsp. honey
1 lime (juice)
10g fresh coriander (cilantro)
1/2 tsp fresh chilli
Salt & pepper

COCONUT RICE
basmati rice
coconut milk
water
butter
1 tbsp. furikake

GARLIC TAMARI TENDERSTEM
200g tenderstem or broccoli
2 garlic cloves
1 tbsp. tamari or soy sauce
2 tbsp. water
extra virgin olive oil

~ Fully loaded chicken + lentil sweet potato (serves 2)

2 medium sweet potatoes
2 chicken breasts (approx 150g each)
1.5 tbsp. garlic powder
1/2 tsp smoked paprika
1.5 tsp. cumin powder
1/2 tsp. chilli flakes
1 tsp. coriander powder
1 tbsp. dried oregano
1.5 tbsp. smokey tomato paste
1 tbsp. chipotle paste
1 small onion
3 jarred peppers or 1 fresh pepper
150g puy or beluga lentils
salt & pepper
extra virgin olive oil
15g fresh coriander

optional extras:
jalapeño
soured cream
avocado

  3. I made your Chicken Fajita SweetPotato. I found most of the ingredients were available with me. Had some cooked Lentils from last night. I dint have smokey chipotle/ tomato paste, which I just replaces by regular Tomato paste. I also dint have pasley/coriander, so just added coriander powder with the peppers & onions. It was so filling & flavorful. Thanks a lot for sharing ❤
    I am curious to what would be the vegetarian options for the filling to replace chicken.

I would love to see a video on what you snack on between meals and a video on the cookware, dinnerware and any particular appliances you use.
