BAKED TOFU PARMESAN

1/3 cup ounces vegan mozzarella shreds (40g)
1/2 cup (125g) tomato sauce
1 egg replacer

Breadcrumbs
1 cup (58g) breadcrumbs of choice
1 teaspoon dried parsley
1 tablespoon nutritional yeast
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt

VEGAN SCALLOP LEMON BUTTER PASTA

1 tablespoon (14g) olive oil
1/2 medium Vidalia onion (about 3 ounces/85g), chopped
4 to 5 garlic cloves, sliced
1 can (14 ounces/400g) hearts of palm
2 tablespoons vegan butter (28g), divided
8 ounces (226g) pasta of choice
2 medium sized lemons (about 9 ounces/260g)
2 teaspoons (10g) vegan parmesan
Salt and pepper, to taste

CREAMY SAUCY BUTTER BEANS

1 bell pepper (around 7.5 ounces/215g), roughly chopped
1/2 onion (around 3 ounces/85g), roughly chopped
3 to 4 garlic cloves, whole
1/2 tablespoon olive oil
1/4 cup (30g) cashews
2/3 cup (150g) tomato puree
1/2 cup (120ml) non-dairy milk, unsweetened and unflavored
2 (15 ounce/454g) cans butter beans, drained and rinsed
1 cup (140g) dry polenta
Salt, to taste

  2. Great idea using hearts of palm as the scallop replacement. Like you I do not like king oyster mushrooms. I’ll definitely give this a try!! 😋

  4. Love the tofu parm idea! I think I'm going to try marinating the tofu first to take away a little bit of the beany flavour. I adore eggplant parm, but I love this higher protein take (don't know why I never thought to do it myself!)

  6. Try cooking polenta with veggie stock, tumeric and add some butter and nutritional yeast when it's done… It's my absolute fave thing and super cheesy ❤

  8. Hi Francesca! These recipes all look and sound AMAZING – I can’t wait to make them! Two questions – what brand of polenta do you use/recommend? Also, is there anywhere on your site where we can find info on the cook/bakeware you use? I love your pots, pans, and even the dishes you use – they make the cooking process look so cozy. I’d love to know what you use.

  9. The creamy butter bean recipe looks great and uses whole food ingredients. I seldom eat polenta and look forward to pairing it with the butter beans. What a great combination together!

  10. Gasp. You don't like mushrooms? I knew it. You're an alien. Hearts of palm are more accessible replacement, though. I have to go somewhere fancy pants to find king oyster mushrooms and even then, it isn't guaranteed. Recipes look delicious. Missing some ingredients to make any of them but picking up what's needed is doable. Thanks!

  11. Ive never had polenta so I would use rice or something else, it just reminds of a creamy cereal. Those first 2 look wonderful, hearts of palm.are.so good for everything. I love H of P mash, its like mash potatoes but not, now that would go great with the butter bean recipe. Thank you
