John’s Slow Cooker Red Chili Recipe (Mom’s Family Recipe)
This hearty slow-cooked red chili is a cherished family recipe passed down from John’s mom. It’s simple, packed with flavor, and perfect for cold days, game nights, or any time you need a comforting meal:
Ingredients
For the Ground Beef Mixture:
– 1 lb 90/10 grass-fed ground beef (or 80/20 if preferred)
– ½ medium onion, chopped
– 2 tablespoons minced garlic (or fresh garlic, finely chopped)
Seasonings for the Beef:
– L’s seasoned salt (or your favorite seasoned salt)
– Kinders seasoning (or any all-purpose blend)
– Cayenne pepper (adjust to taste)
For the Chili:
– 2 (15.5 oz) cans hot chili beans (Kuner’s brand used)
– 1 (14.5 oz) can diced tomatoes
– 1 (10 oz) can Rotel diced tomatoes & green chilies
– ¼ can water (to rinse out tomato juices and add to chili)
Final Touch Ingredients:
– ½ tablespoon sugar
– ½ tablespoon red wine vinegar
– 1 teaspoon oregano
– ½ teaspoon red pepper flakes
Optional Toppings:
– Shredded cheese
– Chopped raw onions
– Shredded lettuce
– Keto-friendly or whole wheat tortillas
Instructions
Step 1: Cook the Ground Beef
1. Heat a skillet over medium heat and add the ground beef.
2. Sprinkle in seasoned salt, Kinders seasoning, and cayenne pepper to taste.
3. Cook and break up the beef until fully browned.
4. Once browned, stir in the chopped onions and cook until they become translucent.
5. Add the minced garlic, stir well, and let the mixture simmer on low heat for a few minutes to blend flavors.
Step 2: Prepare the Slow Cooker
1. In a 6-quart slow cooker, add:
– 1 can of diced tomatoes
– 1 can of hot chili beans
2. Stir the mixture and set the slow cooker to high heat while the beef mixture finishes cooking.
Step 3: Combine Everything
1. Transfer the cooked ground beef, onions, and garlic into the slow cooker.
2. Add the second can of hot chili beans and the Rotel diced tomatoes & green chilies.
3. Pour ¼ can of water into each empty tomato/chili can, swirl, and add the liquid to the slow cooker to get all the flavors.
4. Stir to combine.
Step 4: Add the Secret Ingredients
1. Add ½ tablespoon sugar and ½ tablespoon red wine vinegar to enhance flavor.
2. Sprinkle in 1 teaspoon oregano and ½ teaspoon red pepper flakes for depth and spice.
3. Stir well, making sure everything is evenly mixed.
Step 5: Slow Cook the Chili
1. Cover and cook on high for 2-3 hours or low for 4-5 hours.
2. Once the mixture begins to simmer, turn the heat to low and let it slow cook for another 2 hours, stirring occasionally.
Step 6: Adjust and Serve
1. Taste the chili and adjust seasoning if needed (salt, pepper, or more red pepper flakes).
2. If the chili is too thick, add a little water to reach your preferred consistency.
3. Serve hot with shredded cheese, chopped onions, shredded lettuce, and a warm tortilla on the side.
