On the subject of Chinese chili oils you got to try Chiu Chow as well. It's just as tasty, but in a totally different way.
Ed is so much more knowledgeable than just the whole "this is the spiciest thing ever" schtick that has been thrust upon him, I never realized how much I liked listening to him talk. I learned about several new condiments I am going to try now.

Thanks for including the Löwensenf hot in there. It's a real power house and to me has a horseradish-like punch to it that mellows out after burning your nose hair off.
Walkerswood Scotch Bonnet sauce is one of my favorites. The flavor of the peppers really shines even though the heat this stuff brings. It's not a superhot, by any means, but it is a grade or two above Tabasco, Cholula, and the like. It hits me roughly the same as — maybe a bit hotter than — El Yucateco's red or green habanero sauce, except even tastier — and that's sayin' something, because El Y sauces have long been constant members of my pantry). (Ed: Wow, you included another favorite! Herdez Salsa Ranchera. It's fantastic on tacos and burritos!)

12:00 Yup. You want the taste of mustard, that's precisely what you get. So German mustard is just barely a condiment in that you can use it on meats. But if you want a sauce, you'll have to whip it into some other stuff.

Harissa is great in pumpkin dishes, too (savory ones, not pumpkin pie!). Try to find the Phare du Cap Bon brand or another one that is produced in North Africa – they are way better (and spicier) than the stuff made in Europe or the US.
