Part 1/10 of my Cold Weather Comfort Food Series
The best and easiest beef chili. Served with rice, cheddar cheese and sour cream, this is one of my all-time favorite recipes for when the weather gets cold🫘🥫
– 1 tbsp avocado or olive oil
– 1 large onion, diced
– 1 bell pepper, diced
– 2-3 jalapeños, diced, optional
– 8-10 cloves garlic, minced
– 1 lb ground beef (ground chicken works too)
– 2 tbsp tomato paste
– 3 tbsp chili powder
– 1 ½ tbsp smoked paprika or regular paprika (or a mix of both)
– 1 tbsp dried oregano
– 1 tsp each cumin, garlic powder, onion powder and cayenne (this chili isn’t very spicy, but if you don’t like spice at all, reduce or skip the cayenne)
– 1 tsp each salt and black pepper, or more to taste
– 1 28oz can diced tomatoes (the large cans)
– 1 15oz can crushed tomatoes (the smaller cans, or use half a large can)
– 2 cups beef broth (or chicken broth; I prefer my chili thick, but if you like yours a bit thinner add an extra cup of broth)
– 1 can kidney beans
– 1 can cannellini beans (white kidney beans)
– Rice, for serving, optional
– Cheddar cheese, shredded, for serving, optional
– Sour cream, for serving, optional
Heat a large pot over medium heat and add the oil
Add the onion and sauté until starting to soften, about 2-3 mins
Add the bell pepper, jalapeños and garlic and sauté for another 2-3 mins
Add the ground beef and break it up with a wooden spoon
Cook the beef for 3-4 mins, draining if necessary, until mostly cooked through
Add the tomato paste and all the spices except the salt and pepper; cook for 2-3 mins or until the tomato paste has darkened and the spices are toasted
Pour in the tomatoes and the broth (transfer some broth to the tomato cans so you get all the tomato juice) and stir
Stir in the beans (use any 2 kinds you like) and the salt and pepper
Cover and bring to a boil then reduce to low, uncover and scrape the bottom of the pot
Simmer uncovered (to reduce the liquid) for at least 1 hour or longer (I like to make this in the morning and let it simmer until dinner time because the flavor gets so much better the longer it cooks)
