Feta, Bell Pepper, and Bacon Omelet

Ingredients:
• 2-3 eggs
• Feta cheese, crumbled
• Bell peppers, diced
• Arugula (for serving)
• Green onion, chopped
• Bacon, cooked and chopped
• Olive oil
• Salt
• Black pepper
• Chili flakes (optional)

Instructions:
1. Whisk the eggs with a pinch of salt and pepper.
2. Heat olive oil in a pan over medium heat.
3. SautƩ the diced bell peppers for a minute until slightly softened.
4. Pour in the whisked eggs and cook until the edges start to set.
5. Add crumbled feta, cooked bacon, and chopped green onion to one half of the omelet.
6. Sprinkle chili flakes if using.
7. Fold the omelet in half and cook until done.
8. Serve with fresh arugula on the side.
