Colorado pork hatch green chili:
2.5 pounds cubed pork shoulder
2 chopped yellow onions
8 chopped garlic cloves
5 chopped canned jalapeños
14 oz hatch green chiles
14 oz diced tomatoes
2-3 cups water (roughly)
1 tsp Knorr seasoning (adjust to taste)
1 tsp salt (adjust to taste)
1 tsp cumin
roux-1 stick butter and flour (added when pork is tender)
Cheese for topping (optional)

eat it on its own, over a burrito, in a burrito, with eggs, etc….

use video as a reference-Combine all ingredients except the roux in a pot. Add water to cover. Cook until pork is tender. Make a roux with butter and flour, then stir into the stew until desired consistency is reached. Top with cheese if desired.
