Roasted Vegetables with Chickpeas
Ingredients:
zucchini
carrots
green beans
potatoes
red onion
1 can chickpeas, drained and rinsed
olive oil
paprika
black pepper
salt
garlic powder (optional)
lime or lemon juice
Sweet chili sauce
(Sweet chili sauce adds a nice kick, but any preferred sauce will work)

* Cut all vegetables into even sizes for uniform roasting
* Spread on a baking sheet; arrange in a single layer for even cooking
* Bake in a preheated oven at 400°F (200°C) for 35-40 minutes, flipping halfway through, until veggies are tender and crispy
* Olive oil helps with browning and flavour; 2-3 tbsp per baking sheet is good.
Enjoy it as a side dish or a hearty meal on its own!
