Grilled lobster with chili garlic butter for the win! California spiny lobster is a bit different from Maine lobster. It doesn’t have claws, and the meat is a bit firmer and sweeter. Throw the whole thing on the grill doused in this delicious garlic butter, and you have a quick and easy meal that will impress everyone.

1/2 lb butter
2 red chilis (you can use sweet ones if you want)
3 cloves garlic, sliced
1 tsp salt
** optional ** (roe from inside lobster)

Melt butter in a pot on medium-high heat. Add chopped chilis, salt, and sauté for 1-2 min. Add garlic and roe. Stir just until garlic is fragrant (about 30 sec-1 min). Strain into a bowl.

Cut lobster in half and clean inside. Brush with butter and place onto the grill on high heat, she’ll side down. Depending on the size of the lobster, cook for 2-5 min or until lobster flesh starts turning opaque. Brush with butter and flip for about 1 min. Do not overcook it! Serve with lemon!
