  2. I made these with chicken thighs. I have developed food allergies in my old age. Only Italian in the world allergic to onions and garlic. I’ve had to get creative with my old recipes from my Mom. I can have peppers, broccolis and Italian green beans, carrots and green onion and chives, and eggplant. But my artichoke and asparagus days are over. I usually roast a huge pan of the vegetables, half way, in the oven including cabbage and plum tomatoes. Then I put them in plastic freezer bags to used when I need them, with chicken, pork chops and even the rare occasion I can afford a steak. The roast vegetables and a protein, or even over pasta can make my day. Grazie Lidia. ā¤
