Ful Mudammas (Fava Beans)
This is my Tété’s (grandmother) #recipe. And it’s on repeat few times a week at #iftar during #Ramadan
ingredients:
2 cans whole #FavaBeans the small bean kind ( there are many varieties of fava beans)
2 cups small chopped #Tomatoes
1 cup finely chopped #Parsley
1/2 cup finely chopped #Anaheim #Pepper or any #GreenPepper you like
1/2 cup finely chopped red #onion
1 Tbs minced #garlic
1/3 cup fresh squeezed #Lemon #juice
1 tsp ground #cumin
2 tsp #salt or to taste
1/3 to 1/2 cup #ExtravirginOliveoil
Freshly heated #Pita #Bread to serve with.
Directions:
Add fava beans to a medium sized pot, add enough water to cover. Add cumin and 1/2 of the salt. Bring to boil then lower heat, and allow to gently simmer while chopping the vegetables (about 15 minutes.)
In a large bowl, mix chopped vegetables, minced garlic & lemon juice. Add hot fava beans and about 1 cup of the fava simmering liquid. Mix to combine, add olive oil and mix again. Taste for seasoning. Serve while it’s warm with pita bread. #SyrianFood
