INGREDIENTS
2 pounds (908g) boneless skinless chicken thighs
salt and pepper to taste
4 tablespoons 60ml) extra virgin olive oil
1 large onion diced
6 cloves garlic minced
1 teaspoon crushed hot red pepper flakes
1 1/2 pounds (680g) cherry tomatoes halved
1 pound (454g) orzo
3 1/2 cups (840ml) low-sodium chicken stock
1 tablespoon (22g) honey
1 tablespoon dried greek oregano
2 tablespoons (30ml) lemon juice
1/2 cup (70g) kalamata or gaeta olives pitted, rinsed, and chopped
1/2 cup (57g) crumbled feta
1/2 cup minced flat-leaf Italian parsley

This to me is closer to a 15-minute meal. The onions, garlic and tomatoes can be prepped while the chicken is searing. Like Tara said, it's easy to clean up. The only thing that can really slow you down is cleaning the fat off the meat. I'll look for the bigger orzo for now on, it never seems as good at home as when I have it out. Overall, another great meal and presentation.
This dish looks amazing. Also, Jim, I found this great dish that’s also Greek. It’s called Youvetsi or Giovetsi. It’s orzo cooked with tomato and wine with lamb or beef braised in it. It’s often topped with parsley and feta. I think that’s a dish you should totally try out on this channel.
Looks delicious. I made a one pan Lemon Chicken Meatballs with orzo a few weeks ago and oh, it was good. I'm loving these easy recipes. We don't eat until late and now that I'm in my 60s, I don't feel like fussing with much but I also have that old school thought that I need a nice plate of food 😄

I hate it when I am in a hurry and buy olives that aren't pitted! I'm too lazy to pit them so they end up being snacks.
Wanted to say thanks for putting this up when you did! I was looking for ideas for a simple dinner recipe to make tomorrow and was thinking about doing your shrimp and orzo again which was a big hit in my home. This is a perfect variation.
Also wanted to make two remarks:
1) I like the mix of easy/one-pot/one-pan and more involved dishes you put out on the channel, it's helped me build out a repertory of go-to weeknight dishes and a few more impressive ones. Would love to see that continue.
2) There is a sense of happiness and togetherness that your family has that really comes through in these videos, which is always nice to see. You are lucky folks! More Tara in the videos!

I appreciate the "simplicity" of your recipes. 1 large onion, 1 pound of orzo. I will make this for my family. I'm not making a 37 step 20 ingredient recipe on a Wednesday night.

Thank you for your comment about food quality. I've noticed that the boneless, skinless thighs I get from my local grocery store are sloppy.
I make a similar style of recipe but totally different ingredients. Spanish rice Rice-a-roni in butter, petite diced tomatoes, ground beef, beef stock, spices, red pepper flakes, melted cheddar cheese over top. Makes 4 large servings. Cooked in a similar manner in the same kind of large skillet.

I am laughing at „one large onion“ as American large onions are two to three times larger than European large onions. 😂
Same goes for potatoes… How do you grow those gigantious fruits?

Do you switch up the type of onion depending on the recipe? I assume a yellow onion is the most versatile. On a side not my wife hates chicken thighs so I would do the breast sear and add in at the end like you said.
