Ingredients
⢠1-pound ground beef
⢠1-pound stew beef, cubed
⢠1- stalk Celery, diced
⢠1- small bell pepper, diced (I used red and yellow bell pepper)
⢠1- Onion, diced
⢠3- cloves garlic, minced
⢠1- (15-oz) can petite diced tomatoes
⢠1- tbsp. tomato past
⢠1- (8 oz.) can tomato sauce
⢠1- Serrano pepper or jalapeno pepper finely chopped
⢠½ tbs Cayenne pepper or 1 tbs Korean chili pepper flakes (I used Korean pepper)
⢠1 tbs- paprika powder
⢠1-1/2 tbs Cumin powder
⢠1-1/2 tbs Cocoa powder
⢠Salt and pepper to taste
⢠Oil
Heat an iron skillet, brown stew meat in batches. Place the ground beef in the Same pan and cook over medium heat until no longer pink. Set aside.
Heat little oil, sautƩ garlic, onion and green chili. Add bell peppers and celery.
Mix in chili powder, cayenne pepper, cumin and season generously with salt and pepper.
In a slow cooker, combine meat and sauteed vegetable. Pour in crushed tomatoes, tomato sauce, tomato paste and cocoa powder, Mix well. Cook on high for 4 hours or on low for 6 hours. Season with more salt and pepper, if necessary.
Ladle into bowls and top with cheddar, sour cream, and chopped onions.
