Well… it should be countless number of time i have eaten this in my life.. Such a divine recipe.. so aromatic and so tempting ! this dish is so popular, that you can find this almost in every street corners in chennai now…

Now .. fair warning.. I am from Chennai, India and this recipe is from that area .. so it might be different from other parts of India. Keep that in mind. The Chicken and Mutton Masala used in the recipe is labeled vegetarian ! no meat is used in this recipe .. just the masala.

This kalan recipe is actually made from cabbage and maida but in this recipe we are going to add the actual mushroom to prepare this roadside mushroom masala.

Ingredients:

For Cabbage Mushroom Fritter :
2 cups Cabbage (finely chopped)
2 cups Mushroom (finely chopped)
1/2 cup All purpose flour / maida OR wheat flour
1/4 cup Corn flour
2 tbsp Rice flour
1 tsp salt
1 tbsp Chili powder
1/2 tbsp Coriander powder
1 tsp Garam masala
1 tbsp Chicken masala powder
1/2 cup Water (as required)
Oil for frying

Masala water :

1 tbsp Crushed chili ginger garlic paste
1 tsp Chili powder
1 tsp Coriander powder
1/2 tsp Garam masala
1 tsp Chicken masala
1 tbsp Mutton masala
1 tsp Salt
3 cups Water
1 tsp Corn starch ( mixed in 2 tbsp water)

Mushroom masala:
1 tbsp Oil
5 to 7 Curry leaves
3 nos Green chili, slit
1 no Onion small, finely chopped
Masala water
Cabbage Mushroom Fritters

For Higher spice level add (optional)
1/2 tsp chili powder
1 tsp chicken masala powder
Salt as required
