1 can kidney beans
1 can cannellini beans
1 can black beans
1 can pinto beans
1 can chickpeas
1 can corn
1 can tomato paste
1 jar salsa
1 can diced tomatoes
1 carton veg broth
1 tbsp chili powder
1 tbsp salt (or to taste)
1 tbsp garlic powder
1 tbsp paprika
1 tbsp cumin
1 tbsp black pepper (or to taste)
1/2 yellow onion
Chopped green onion (to garnish)

FOR THE CASHEW SOUR CREAM:
1 cup cashews
3/4 – 1 cup water (more if you prefer a thinner consistency)
Salt (to taste)
Juice from 1 lemon
1 tsp apple cider vinegar
