  1. I must have at least six or more of the larger bottles of that exact brand in my cabinet. I use it extensively for many dishes. Not just Chinese cuisine but Japanese and Thai as well. It is a great flavor boost to just about everything. For the record, we do like very hot peppers so we grow our own Trinidad Scorpion, Ghost and Carolina Reaper peppers for when things need to go to the highest level. My kids were all raised with Thai peppers so the entire family knows how to cook with them.
    Expect an order for you book in the near future. I do like watching your very instructional videos so never, ever apologize for talking too much when you are educating all of us so well.

  3. The sauce for the General Tsao's chicken seems to have the same ingredients as the sauce for 凉拌, just different proportions.

  4. I was raised on this stuff! We aren’t Chinese but my Dad got us into it as kids he loves Chinese food, my bro and I called it Chinese grandma sauce 😂 it’s occurred to me now how unusual this is now as someone who grew up in the 90s in the UK. Funny that it’s now trendy. Now my 5yo daughter loves it too on her rice continuing the traditions!

  5. I use Lao Gan Ma to make chilli fried rice. Add a tbsp in with the sauce and use the oil to fry the rice. Delicious! I normally use the black bean one but the regular one works too.

  7. 15 57……. I always get lotus root when I go to my hotpot place, but even though the lotus root is first into the pot and last taken out, they are still hard and crunchy. How long does the lotus root have to cook to be tender?

  8. In regards to saving oil, I've gotten my oil to last so much longer if I strain it after every use. Sure, it's a pain in the butt, but deep frying is already a pain in the butt.
