Lunchbox 8- packing a quick and simple lunchbox featuring warm, tomato rice, chicken and cucumber yoghurt salad.This easy lunchbox idea is perfect for busy mornings when you want to pack something tasty, satisfying, and homemade with minimal effort.

Ingredients:
• 2 cups cooked basmati rice (cooled, so it doesn’t get mushy)
• 2 large tomatoes (finely chopped or blended)
• 1 small onion (finely chopped)
• 2 garlic cloves (minced)
• 1 green chili (slit, optional)
• bay leaf, cinnamon stick, cloves
• 1/2 tsp turmeric powder
• 1 tsp red chili powder
• 1/2 tsp garam masala
• 1/2 tsp coriander powder
• Salt to taste
• 2 tbsp oil or ghee
• Fresh coriander leaves for garnish

• Heat oil/ghee in a pan. Add whole spices
• Once they splutter, add chopped onions and sautĆ© until golden brown.
• Add minced garlic and green chili, sautĆ© for a few seconds until fragrant.
• Add chopped or blended tomatoes, cook until soft and oil starts separating.
• Mix in turmeric, chili powder, coriander powder, garam masala, and salt.
• Cook for 5-7 minutes, stirring occasionally, until it forms a thick paste.
• Add the cooled cooked rice to the tomato mixture.
• Gently mix to coat the rice evenly without breaking the grains.
• Let it cook on low heat for 2-3 minutes so the flavors absorb.
• Turn off the heat
• Garnish with fresh coriander leaves.
