Welcome to Dude Talkin Food! I wanted to share my recipes for Delicious And Easy Tex-Mex inspired Stuffed Bell Peppers. I make these two different ways. I make a Vegetarian version of stuffed peppers with lentils for protein, and then fresh vegetables and herbs. I then add lean ground turkey to my leftover vegetarian stuffed pepper mix to make a high protein, high fiber, and lower in carb, meat stuffed pepper variation. I also share my recipe below for the Green Chili Tomato Sauce used in the video. Both stuffed pepper recipes listed below as well.

Stuffed Pepper Recipe Used in Video
4-5 Large Red Bell Peppers
1 Pound Lean Ground Turkey or Beef
1.5 Cups Cooked Lentils (3.5 Cups for vegetarian version)
1.5 Cups Tomato Sauce or Crushed tomatoes (my sauce recipe below)
1/2 Red onion
3 Stalks Celery
Tops from Peppers
2 Large Cloves Garlic
1/2 Bunch Parsley
2 Teaspoons Cumin (double if using unflavored tomato sauce)
2 Teaspoons Dried Oregano (double if using unflavored tomato sauce)
1 Tablespoon Dark Chili Powder (double if using unflavored tomato sauce)
Salt and Pepper to Taste
Olive Oil to cook with

Green Chili Tomato Sauce Recipe
1.5 pounds of diced Tomatoes seeds and all
1/2 Onion of choice diced
1 Small 4 Ounce can Roasted Green Chilies
1 Large clove Garlic
2 Teaspoons Cumin
2 Teaspoons Dried Oregano
1 Tablespoon Dark Chili Powder
Salt and Pepper to taste
Olive oil to cook with

Sauté onion and garlic in olive oil, with salt, pepper and all spices. Once vegetables are soft, add tomatoes and can of green chilies. Cook till all veggies are broken down into to a chunky tomato sauce (about 20 minutes) you may need to add water as it cooks so it doesn’t dry out.

And I do these two ways. once vegetarian and the second way with lean ground turkey to double the protein. I also use lentils instead of rice to give both recipes more fiber and protein while reducing the carbs.   2. These look great! Nice piece of advice to brush the outside of the peppers with oil before cooking. I’ll be sure to try that on my next batch of stuffed peppers. I’ll also (maybe) try your more Tex-Mex blend of seasonings. I tend to “default” to a more Mediterranean blend, but this sounds good.
