Welcome back to Foreign Tadka, today Iβm sharing my secret chili oil recipe thatβs super aromatic, full of flavour, and made with ingredients easily available in any Indian kitchen.
This homemade chili oil is inspired by traditional Chinese techniques, but Iβve added my own Indian fusion twistusing a mix of Kashmiri red chillies, regular dry red chillies, and garlic, itβs bold, smoky, and unforgettable.
Whether you love chili oil on momos, noodles, ramen, rice bowls, or even parathas, this oneβs for you.

π₯ Quick Recipe (Ingredients + Steps):
Ingredients:
-Peanut oil β 3 cup
-indian-style Gochugaru chili flakes β 3β4 cup ( Kashmiri chili & regular chili)
Garlic β 10β12 cloves, thinly sliced
-Star aniseβ 1 piece
-Black cardamom β 1 pod
– Coriander seeds β ΒΌ cup
– Sichuan peppercorns β ΒΌ cup
– Green Onion β optional
– Sesame seeds β optional
π₯ Method:
1. In a pan, heat peanut oil on low heat.
2. Add garlic, star anise, black cardamom, coriander seeds, Sichuan pepper, and green onion.
3. Let them gently infuse the oil until garlic turns golden brown and aromatic.
4. Turn off the heat immediately β donβt burn the garlic!
5. In a heatproof bowl, add your Indian Gochugaru chili flakes.
6. Carefully pour the hot oil over the flakes β enjoy the sizzle and blooming aroma!
7. Let it cool completely, then store in a clean, airtight jar.
8. Refrigerate β lasts up to 2β3 months and gets better with time!
