One Pot Chili con Carne

One-Pot meals are easy and fast to prepare, don’t create a mess in the kitchen and are full of flavors. Today my fellow bloggers and I are going to introduce you some keto friendly one pot meals.

Keto Chili Con Carne

One Pot Keto Chili con Carne
Ingredients (5 servings, each 492 calories – 7.2 g net carbs – 30 g proteins- 37 g fat)

700 Beef or veal, minced
1 small Onion, chopped
2 Garlic cloves, minced
200 g eggplants, diced
50 g yellow Peppers, finely diced
50 g green Peppers, finely diced
4 tbsp Olive oil
300 ml Tomato sauce
2 tbsp concentrated Tomato paste
2 tbsp Cream cheese
100 ml Cooking cream
1/4-1/2 red Chili
2-3 Jalapeños, chopped

Seasoning:
1 tsp salt or to taste
1/4 black Pepper, ground
1 tsp Cumin, ground
1/2 tsp paprika powder
1/4-1/2 tsp red Chili powder
1/2 garlic powder

Method
1. Heat oil in a pot or wok. Add onions and fry until translucent.
2. Add minced meat and fry for 2-3 minutes.
3. Mix all ingredients for the seasoning and add into the meat. Mix well.
4. Add red chili and minced garlic, mix and fry for 3 minutes.
5. Mix in eggplant into the minced meat and fry for 8-10 minutes on medium to high heat. Add concentrated tomato paste and mix well.
6. Then add yellow and green pepper and fry for two minutes.
7. Pour in cream cheese and mix in and add tomato sauce.
8. Add cooking cream and cook for two minutes.
9. Finally add jalapeños and cook for a minute or two.

Adjust seasoning to taste. If you like it less spicy add less chili or skip the jalapeños.
