Ingredients:
3 medium potatoes
1 handful of fresh parsley
2 pepper, finely chopped
200 g cooked chickpeas
4 garlic cloves
2 tbsp yogurt
1 tbsp mayonnaise
Olive oil (as needed)
1 tsp pul biber (or red pepper flakes)
Salt to taste
Instructions:
Boil the Potatoes:
Start by boiling the potatoes until fork-tender.

Prepare the Parsley Mixture:
While the potatoes cook, finely chop the parsley and pepper. Add olive oil, salt, and pul biber. Set aside — this will be your herby topping.

Make the Creamy Dip:
In a blender, combine chickpeas, yogurt, mayonnaise, and garlic cloves. Blend until smooth and thick, like a creamy dip. Spread it evenly over the base of a wide serving plate.

Crisp the Potatoes:
Once boiled, place the potatoes on a parchment-lined tray. Use the bottom of a glass to gently smash each one flat. Drizzle with olive oil, sprinkle with salt and pul biber, and bake in a preheated oven at 180°C (350°F) for about 30 minutes, or until golden and crispy.

Final Mix:
After baking, break the crispy potatoes into smaller chunks. Toss them into the parsley-pepper mixture and coat well.

Assemble & Serve:
Spoon the crispy herby potato mixture on top of the creamy chickpea dip. Serve immediately and enjoy!
