– Assorted beef: cow tripe, ribs, kidney, heart
– 1 tablespoon ground ehu (calabash nutmeg)
– Habanero pepper
– 2 red onions
– Sweet peppers (optional, for colour)
– Scent leaves (alternative parsley)
– 2 small seasoning cubes
– 2 teaspoons thyme
– Salt to your taste

  1. This is so nice. Did you roast the ehu before peeling and grinding it? Can it be stored for long in the freezer after grinding?

  2. Please what's the difference between Ehu and Ehuru? As I went to the market, I was shown Ehu which was a bit longer than Ehuru.

For those of us who joined you recently, kindly let us know why you prefer using chunks of onions in your fried beans and pepper soups instead of sliced or diced onions.   8. You sliced the onions big big so that you won't see and eat onions while devouring the pepper soup……You added them cause of the flavor and you removed them when they must have released their flavors
