COOK WITH ME: GREEN CHILE STEW/Simple Recipe Made With Hatch Green Chile



I’m often asked what I make first when I pick up my yearly supply of Hatch green chile. In this “Cook With Me” video, I show you. I make a simple, but delicious New Mexico style Green Chile Stew. It doesn’t matter if it’s still hot outside, it’s comfort food at its best. Read on for how it’s made.

Green Chile Stew

1 – 2 pounds beef, cubed
1 – 2 Tbsp. flour (optional for thicker broth)
1 small onion, diced
3 garlic cloves, minced
2 roma tomatoes, diced
1 1/2 cups Hatch green chile (roasted, peeled & chopped)
4 large russet potatoes, peeled and cubed
salt & pepper to taste
1 Tbsp. cumin (optional)
4 cups beef, chicken, or vegetable broth (or water)

Heat a large saucepan on stovetop with enough cooking oil to coat the bottom of the pan. Add cubed beef and brown on all sides. Add flour and let cook a couple of minutes. Then add in diced onion, tomatoes, and green chile. Stir while letting cook a couple of minutes. Add in potatoes and seasonings. Fill pan with enough broth or water to fully cover the ingredients. Let it come to a boil. Once boiling, cover with a lid, reduce heat to low, and let it cook at a low simmer for 45 minutes, long enough for potatoes to soften and meat to become tender. Enjoy!

  1. My husband loves hatch chilis. We use those for chili rellenos also. I coat mine in eggs and corneal and stuff them with cheddar cheese

  5. The first time I had green chill stew they used pork and that is how I make it I use a little celery and carrots also, yours looks really good too, I will try it with beef the next time I make❤

  9. Making this today with some twists. After browning the meat, I added some chorizo. Second, loads of garlic. At the end, I puree some boiled peppers as a finishing touch. Finally, maza for thickening using the reserve water from boiling the peppers.

  12. First thing I make with my fresh roasted green chile, usually while still peeling it, is fresh roasted green chile sautéed in butter with a sprinkle of garlic salt served on plain old white bread. So simple and delicious.

  13. I sure wish I had been sitting in your kitchen the day you made this! I make a similar one, only without potatoes. Mmmmm…August means New Mexico green chiles hauled over to Northern Arizona, usually in horse trailers. Thanks Marcy!
