Very nice recipe, i like to use pablanos instead of bell beppers,, i can make them work, i have done it but a different technique to cut the peppers. Leave some membrane for heat

French people make stuffed peppers, regularly, in the summer, usually when they have some leftover rice. They eat them hot, or at room temperature, for example, at a picnic. š«
I feel cabbage would be a great addition in this.

I'm not a bell pepper fan, can't stand the taste of them. Though I've found that poblano peppers are a good substitute…though keep in mind, if you can't stand spicy peppers, keep to poblanos early in the season, because the more a poblano stays on the plant they'll go from bell pepper spicy to more of a jalapeƱo level of spicy later on in the season.
Learned all this from the best plate of Chiles Relleno I've had in my life that I had to search them out and figure out how to make them myself.
I wonder if I can make this in jumbo muffin tins, so I can freeze it in small portions for later!
