Easy Texas Chili recipe cooked over an open fire for a cold day to make a warm meal. It is made with simple ingredients: 1/2 to 1 – Pound of Bacon chopped
1 – red onion chopped
1 – small white onion
3-5 – lbs of beef cut into 1/2” cubes
1/3 – cup of chili powder
1 – tablespoon minced garlic
1 – tablespoon of cayenne pepper
1 – tablespoon ground Comino (cumin)
1 – tablespoon ground Oregon
1 – tablespoon black pepper
1 – teaspoon of coriander
1, 4 oz cans of hatch green chilies
1, 28 oz can crushed tomatoes
1 – 6 oz can tomato paste
1 – oz unsweetened chocolate chopped
2, 12 oz bottles Shiner black beer
12-24 oz. of water.
Add salt to taste
Cook in a large pot or Dutch oven.
Brown bacon.
Add Onion and cook until soft.
Add beef and cook until the meat is no longer red.
Add all other ingredients and stir.
Simmer until reduced by half.
Serve hot with cheese or other garnish of your liking.
