Popsie’s Beef Chili – Sarah’s Table Ep. 23

Home style beef chili made with organic beef, green bell peppers, onions, garlic, and a mix of spices like chili powder, cumin, paprika, and oregano. Make your beef chili thick by doing this trick! No extender like flour to make it thick but a trick can be done to achieve the right consistency of this beef chili. This dish is very comforting! It brings back childhood memories. Inspired by my father’s Chili Con Carne, as he calls it, I am bringing this dish to life as I remember how he prepared it and how it tasted like. Here’s the full recipe

Popsie’s Beef Chili Recipe
Ingredients:
1 1/4 lb organic beef
1 can black beans
2 cans diced tomatoes
5 cloves garlic
1 medium onion
1 bell pepper
3-5 tsps chili powder
1 tsp paprika
1 tsp cumin
1 tsp oregano

Directions:
Using an Instant Pot, use the SAUTÉ setting. Sauté garlic, onions. Add spices to bring out the flavors. Add beef. Cook until brown. Season with salt and pepper.Add oregano. Mix. Add rinsed and strained black beans. Add canned tomatoes. Mix well. Mash the beans until desired thick consistency is achieved. Place instant pot cover. Set to high pressure cook for 5 mins. If using a stovetop, follow the same steps. After sautéing all the ingredients, simmer for 20 mins in low heat.
Serve with corn bread, or top over rice. This can also be used as a chili dip and serve with nacho chips!
