Ingredients
5 strips uncooked bacon chopped¹
1 large yellow onion diced (about 1 cup)
1 red bell pepper diced
3 cloves garlic minced (about 1 Tablespoon)
1 lb ground beef (455g) (I use 90% but any will work)
1 Tablespoon brown sugar
1 Tablespoon chili powder²
1 Tablespoon ancho chili powder²
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon onion powder
¾ teaspoons ground black pepper
½ teaspoon salt

teaspoon cayenne pepper³
1 ¼ cup beef broth (295ml)
15 oz can dark red kidney beans lightly rinsed and drained (425g)
15 oz can black beans lightly rinsed and drained (425)
14.5 oz can diced fire roasted tomatoes undrained (411g)
7- oz can fire roasted green chilis (198g)
¼ cup tomato paste (66g)
1 Tablespoon Worcestershire sauce
Preferred toppings particularly sour cream, shredded cheddar cheese, and corn chips

Instructions

00:25 Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain all but 1 ½ Tablespoons of grease.
01:38 Add onion and pepper and cook until softened, about 3-5 minutes.
02:22 Add garlic and cook until fragrant (about 30 seconds).
02:57 Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add sugar and all spices (chili powders, paprika, cumin, onion powder, black pepper, salt, cayenne pepper³) and stir well.
05:35 Add all remaining ingredients ā beef broth, beans, tomatoes, tomato paste, chilis, and Worcestershire sauce ā and your cooked bacon and stir well.
08:16 Bring to a simmer, uncovered, and stir occasionally. Simmer for 30 minutes to allow flavor to really develop.
08:35 Serve with preferred toppings (sour cream, shredded cheddar cheese, and corn chips are a must!)
Notes
¹For best flavor, DO NOT OMIT THE BACON. However, as someone who spent 23 years not eating bacon I wanted to include tips for those of you who might have the same restrictions. if you wish to make this recipe without bacon you *can* do so by skipping the first step, heating 1 ½ Tablespoons of oil over medium heat, and then beginning from step 2. On the other hand, if you want additional bacon for garnishing, cook it now and reserve.
²You can substitute one chili powder for the other and use just traditional chili powder or just ancho chili powder, but I personally like the blend of the two.
³This gives the chili a mild spice, if you like more heat increase to ¼ teaspoon for a moderate spice. Add additional cayenne pepper at your own risk!

Question: Can you taste the bacon flavor in the chili? I'm not sure why but I hate the flavor of bacon. š¢ I used to eat all the bacon stuffs and now suddenly I can't stand it. It's quite tragic. lol
This would not come close to winning any of the contests I have been in. It's good sure but its about the most basic chili recipe that everyone uses.

It wouldn't win at the chili cook off at my workplace. Last year, I swear the winner was Hormel canned chili. Those people have no taste.
This may have won awards because it tastes pretty good, but don't call it chili. No thickener? Yikes, this is soup.
Don't use Hunts. It a GMO product.
It's chili weather in Chicago! Bacon as a base is almost cheating. I would use 2 pounds of beef. Also, smoked pulled pork makes great chili. The fire roasted tomatoes and chili peppers is also a great tweak. It's worked great for me. I prefer my chili to have a thicker broth, more like a puree rather than watery/soupy. But I am not a competition cook.

Authentic Southwestern Texas Chili does NOT have Beans in it !!
The First recipe for Chili Con Carne was put on paper in 1731 by a Nun, Sister Mary of Agreda of Spain. She was known by the Indians of the Southwest as '' La Dama de Azul '' , lady in blue. The recipe called for Venison or Antelope Meat, Onions, Tomatoes, and a assorted kinds of Chile Peppers ! BUT NO BEANS !! In All of the Chili Cook Off Competitions if one puts any kind of Beans in their Chili , it's an automatic disqualification from the event !
NO BEANS !! Beans are a side dish that is served with Cornbread or Corn Muffins or Tortillas !

The only true competition events for chili follow ICS rules (International Chili Society) in which I won or placed in many events over the last 50 years, this recipe likely tastes good however it would never make it past the first round of judging. Look up the rules, no visible vegetables, no beans (and yes I like beans but thatās chili and beans, not chili which is meat in a sauce), canāt even have black pepper flakes showing, so the competitions you win are likely local, we call what you are making spaghetti sauce! And yes I know spaghetti sauce does not have beans in it, might be good tho!

2 cans of red beans instead of kidney and black beans. The skin of kidney beans is tough and with red beans you have bean flavor and body without the distracting bitter tough kidney beans skin.

I was surprised that such a labor intensive recipe isn't using a homemade chili sauce. Or even any chili sauce. Pretty much every high-end chili I've seen does it.
