You can’t beat a good bowl of chili, and this might just be the best crock-pot/slow cooker chili recipe you’ll ever make! Whether you are cooking for a weekend game-day crowd or just the family, this one is sure to requested over and over. It’s rich, hearty, and full of flavor with tender ground beef, slow-simmered spices, and just the right balance of smoky and savory. It’s kid friendly, but you can easily spice it up with red pepper flakes or jalapeño seeds if you like a little kick. Everything comes together in the crock pot for an easy dinner that tastes like it cooked all day.

Ingredients:
2 lb ground beef
1 large onion, diced
1 jalapeño, diced with seeds removed (keep seeds for more heat)
1 poblano pepper, diced, seeds removed
3 cloves garlic, minced
1½ cups beef broth
2 cans (14 oz) petite diced tomatoes
1 can (15 oz) chili beans
2 Tbsp tomato paste
2 Tbsp chili powder
1 tsp ancho chili powder
1 tsp ground cumin
1 tsp smoked paprika
1 tsp Mexican oregano or regular oregano
½ tsp ground coriander
½ tsp red pepper flakes
1 tsp cocoa powder (optional but adds depth)
Salt and black pepper to taste
½ to 1 tsp vinegar or a squeeze of lime at the end

Instructions:
Brown the beef in a skillet over medium-high heat until deep brown, then transfer to the crock pot with about half a cup of broth. In the same pan, sauté the onion, poblano, and jalapeño until softened, then add garlic and cook 30 seconds. Stir in the spices and tomato paste, toast for about 30 seconds, then add a splash of broth to deglaze. Pour everything into the crock pot with the beef, add tomatoes, beans, and remaining broth, and stir to combine. Cook on low for 6 to 8 hours or high for 3 to 4 hours until thick and rich. Taste and adjust seasoning, then finish with vinegar or lime juice before serving.

Layer over a bed of corn chips with cheddar, sour cream, jalapeños, or chives and enjoy a hearty bowl of chili that’s perfect for any night of the week.

  2. Looks so good Zack!! I'm a big chili person and I'm not crazy about the beans either but they sure add a flavor to it that you miss if they are not some in there. Fritos is so good in there but after all my years of research lol😅 the best chips is those tgif Friday chips the cheddar and bacon flavor. Absolutely awesome. Love the crockpot meals also. I love cooking that way 😊

  7. I saw Alex G from The Kitchen say the heat of the jalapeño comes from the ribs not the seeds. Since the seeds touch we think it’s the seeds but it’s really the ribs of the pepper. Interesting huh? So we need to get the ribs off also for less/no heat.

  13. Yum!! We live in Southeastern Colorado and eat a ton of chili. Im going to try it with shaved lettuce on mine the next time. I only like pinto or black beans in my chili. We will also have Cincinnati chili. It was on an episode of Diners, Drive-ins and Dives. You put spaghetti noodles on the bottom then your chili, so good. I love hearing your kids in the background, as well as them popping in the help or taste test. ❤

  15. For the jalapeños take a spoon while it is whole and go around the outside of the pit. It will get all the ribs out and the seeds.
