Ingredients
Tray Base
• Pork sausages 6 – 8 pieces (approx. 600 g)
• Bell peppers, sliced – 3 medium (400 g)
• Onion, sliced – 1 medium (120 g)
• Olive oil – 2 tbsp (30 ml )
• Salt – ½ tsp (3 g)
• Black pepper – ½ tsp (1 g)
Sauce
• Condensed tomato soup – 1 can (295 g)
• Hot water or stock – 2½ cups (600 ml / 800ml)
• Garlic, minced – 3 cloves (12 g / 1 tbsp / 3 tsp)
• Olive oil – 1 tbsp (15 ml / 14 g / 1 tbsp UK / 1 tbsp US)
• Balsamic vinegar – 1 tbsp (15 ml / 15 g)
• Tomato paste/puree 1 tbsp
• Dried basil – 1 tsp (1 g) I used Italian seasoning https://youtu.be/zfLNNaYqjtQ
• Dried oregano – 1 tsp (1 g)
• Crushed chili flakes (optional) – ¼ tsp (0.5 g)
• Sugar – ½ tsp (2 g) (balances acidity)
• Salt – ¼ tsp (1.5 g) (taste and adjust)
Pasta
• Dried pasta (penne, rigatoni, shells, fusilli) –
250 g (9 oz / 3 cups UK / 3 cups US) (short pasta is best)
Finish
• Fresh basil – 2 tbsp chopped (6 g)
• Parmesan – (grated) (optional)
Set to 200°C / 400°F.
Bake the sausages first for 20 minutes to brown them slightly.
Bake a further bake 25–30 minutes, after pasta and sauce.

  2. Can you use non-condensed tomato soup? I can't find any at my local supermarket. They only seem to stock condensed mushroom.

  3. That looks really good Chef! I have a similar idea using condensed soup, but I use mushroom or chicken soup. It's otherwise the same as your pasta a vegetables mix, plus sweetcorn, and I use ham or chicken, sometimes just plain veggie.

    The recipe is from my school days, I did O – Level Food and Nutrition. The recipe is at least 45 years old!

  4. What a wonderful dish-beautiful and flavorful. Ideal for a busy family and so much better than fast food. Kids would appreciate the tomato soup sauce as it's a little sweeter and not as harsh as plain tomato sauce. Sometimes I'll add a spoonful of jarred pesto.

  5. Can a different oil be used such as avocado, although the olive is more authentic ? Pleased to see it doesn’t contain celery 😂

  6. I make pasta bakes a lot. They are so convenient and easy to make. I consider them an easy meal. Sausages re great for them, or I use tins of chopped pork, spam, or ham. It’s just very convenient and satisfying. . I could eat that now Rik xx

  10. Looks good Rik. I had to laugh at the remark you made about the skinless sausage. Your recipe has given me an idea for chicken sausage and creamy mushroom soup pasta bake. I think you may have done that before, I'll check the lists.
