Easy Keto Crock Pot Dump Chili (The BEST Low-Carb Chili!) – Full Recipe + Macros

This is the easiest keto chili you’ll ever make — just dump everything in the Crock Pot and let it turn into the most flavorful, award-worthy low-carb chili. No beans, no fuss, and loaded with bold chili flavor. Perfect for meal prep, cold-weather comfort, or anyone eating keto, low-carb, or high-protein.

🌶 Ingredients

2 lb ground beef

1 lb ground chorizo

1 medium onion, diced

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

1 (14.5 oz) can diced tomatoes

1 cup beef broth

2 tbsp chili powder

1 tbsp smoked paprika

1 tbsp cumin

1 tsp onion powder

1 tsp garlic powder

1 tsp salt (adjust to taste)

½ tsp black pepper

½ tsp oregano

½ tsp chipotle powder (optional, adds smoky heat)

1 tsp Worcestershire or ½ tsp soy sauce (umami boost)

🔥 Instructions

Brown the ground beef and chorizo together (optional, but adds flavor).

Add all ingredients to your Crock Pot.

Stir well so the spices distribute evenly.

Cook on LOW for 6–8 hours or HIGH for 3–4 hours.

Taste, adjust salt/spices, and serve with your favorite keto toppings.

  4. I use canned pumpkin in my chili instead of tomatoes and it makes a thick chili without adding flour. You could do half pumpkin and half tomato. It’s fantastic. And some cinnamon also.

  5. Hi Dave. I used to work for Wendy's. The meat in the chilli is actually burger patties left on the grill a little longer and put to the side until it's time to make the chili. The ground beef comes in huge bags and has to be formed into squares with a machine.

  6. Try using one or two beaten egg yolks to thicken it without carbs! I mix it into a liquid that I add in to prevent it from curdling.

  7. This is a "lowish" carb chili.
    Definitely not a no carb chili.
    Veggies have carbs, tomato, onion, and peppers all add carbs.

It looks so much nicer with your own photos just because it feels like we’re right up in the kitchen with you ya know? Also, to answer your question, I did have a food I hated as a kid and now love as an adult. That food for me is salad. I used to gag at the thought of eating any sort of greens.. now I eat salad daily along with a good Italian dressing. Nothing better. I also hated mayonnaise and still do as an adult, but there’s a long and traumatic story behind this that I won’t bore you with 😂 thanks again for sharing this! 😊

    Here is the actual ingredient list, based on what he said in the video. I made it this evening and it’s really good.

    1 poblano pepper, diced
    1 jalapeño pepper, diced
    3 tbsp tomato paste

    1/8 tsp cayenne pepper (optional)
    4 oz cream cheese
    1/2 cup heavy cream
    1 cup shredded cheese (fiesta blend or cheddar)
    1 tbsp apple cider vinegar

  12. Dave: Could you do a posting on Keto travel food, what you can take with you if you're going to be out all day without refrigeration or cooking. I know anything with mayonnaise is only safe for about two hours, unless you have one of those cooling bags, I suppose. But personally, I don't want to fuss with finding room for a bag, when my car is usually already pretty packed. You got any ideas?
