Ingredients:
906g/ 2 lb. ground beef
42g/ 3 tbsp. vegetable oil
52g/ 1 cup diced white onion
85g/ 1 cup diced red bell pepper
8g/ 2 tsp minced garlic
4g/ 1 tsp salt
4g/ 1 tsp pepper
8g/ 2 tsp ground red pepper
14g/ 1 tbsp. chili powder
8g/ 2 tsp cumin
8g/ 2 tsp ground coriander
2g/ ½ tsp ground cardamom
85g/ 3oz tomato paste
794g/ 28oz diced tomatoes
637g/ 23oz kidney beans (strained)
74ml/ ½ cup red wine
118ml/ ½ cup water
Shredded cheddar Cheese (topping)
Sour cream as a garnish for serving.
Instructions:
Preheat oven to 350 F/ 176 C
In a skillet with lid/ Dutch Oven over medium heat, heat oil
Add onion and red bell pepper and sauté for 3 minutes.
Add garlic and combine then heat until fragrant.
Add ground beef and combine
Add salt, black pepper, chili powder, cumin, red pepper, coriander, and cardamon and combine
Serves 6 to 8 people

Cook until ground beef until all the pink is gone.
Add tomato paste, diced tomatoes and combine
Add kidney beans, red wine and water and combine
Cover with lid and transfer to the oven
Bake 350 F/ 176 C for 2 hours (120 minutes).
Remove from oven and allow chili to rest for 5-10 minutes.
Top each portion with shredded Cheddar cheese and a scoop of sour cream.
