This is one of those quick Italian pastas I always make when I’m travelling. I want big flavour without fuss, and this one delivers every time. Most of the ingredients are usually on hand which is what I love. The anchovies melt into the butter, the chili adds a little kick, the lemon keeps it bright, and the parsley lifts it right at the end. It’s fast, silky, and full of that real Italian emulsified magic that makes you wonder why simple food tastes so damn good!

Yeah, “fist” the pasta water. Make sure your pasta water is well “fisted” before you do anything else.
Just one question – what is the attraction of parsley when coriander/cilantro exists?
The hard part is finding quality anchovies.
I do this recipe pretty often, but i use olive oil instead of butter and i left the garlic after slicing it.
Aglio & olio pastas whith anchory, chilly flackes, and a bit of vinegar or lemon juice are just awesome 🙂
