Here’s how to make Paya

Ingredients details—
3 buffalo trotters
1 kg bong meat
5-6 onions
1 tbsp salt
1 tbsp turmeric powder
3-4 bay leaves
3-3.5 litres water

5 to 600 ML oil
7 big onion paste/sliced
Whole spices—
Here’s the list:

– 2 black cardamom
– 2-3 green cardamom
– 1 big cinnamon stick
– 2-3 bay leaves
– 1 tsp cumin
– 1 tsp black pepper
– 1/2tsp cloves
– 1 mace

5 tbsp ginger garlic paste
2 tbsp salt pr to taste
2 tbsp chili powder pr to taste
4 tbsp coriander powder
1 tbsp turmeric powder
3 tbsp tbsp kashmiri chili powder
2 tbsp garam garam

Steps—
1. Wash and boil the paya in a pressure cooker with 3-3.5 liters of water, adding onions, salt, turmeric, and bay leaves. Cook until tender (about 1 hour).
2. Add the meat in tha same stock and cook for 20-25 minutes. Set aside.
3. Heat oil in a large pan and sauté onions (or onion paste).
4. Add the whole garam masala, ginger-garlic paste, and sauté.
5. Add powdered spices and sauté.
6. Add the boiled trotters and meat, mix well.
7. Add the stock (yakhni) cook for 10-15 minutes(med-low heat)
8. Adjust salt, chili
Add 1 tbsp of garam masala powder.
9. Garnish with green chilies and serve hot.
