Ingredients
(Serves 4–6)
Main Ingredients:
• Cooked shredded chicken – 450 g (1 lb)
• White beans (cannellini or great northern), drained and rinsed – 2 cans (800 g total / about 3 ½ cups)
• Chicken stock or broth – 480 ml (2 US cups / 1 ¾ UK cups)
• Onion, finely chopped – 1 medium (150 g ≈ 1 cup)
• Garlic, minced – 3 cloves (1 tbsp ≈ 3 tsp)
• Olive oil – 2 tbsp (30 ml ≈ 1/8 US cup ≈ 1/8 UK cup)
• Diced green chillies – 1 can (115 g ≈ ½ cup)
• Ground cumin – 1 ½ tsp (3 g)
• Ground coriander – 1 tsp (2 g)
• Dried oregano – ½ tsp (0.5 g)
• Smoked paprika – ½ tsp (1 g)
• Salt – ¾ tsp (4 g) or to taste
• Ground white or black pepper – ¼ tsp (0.5 g)
• Cream cheese – 85 g (3 oz ≈ ⅓ cup ≈ 5 tbsp)
• Sour cream or heavy cream – 120 ml (½ US cup / ≈ ½ UK cup)
• Lime juice – 1 tbsp (15 ml ≈ 3 tsp)
Optional toppings:
Shredded cheese, chopped coriander (cilantro), sliced jalapeños, diced avocado, tortilla chips.

  1. Looks fantastic- rich and creamy and the cheese puts it over the top. Since I'm back on the straight and narrow I'll be doing a veg version. I'll either use canned cannellini or homemade navy beans, bulk it up with yellow bell peppers and sometimes diced carrot and tofu cubes. Canned green chilis as you said and top with hot sauce as needed. If meat is dear it can easily be stretched with macaroni to feed a crowd. I'm in the US, Great Lakes region and I've been making one version or another for years. Nice change from tomato-based chili.

  9. Make something very similar and take it and place some on tortillas with some cheese and roll them up and bake them until crispy and light brown. Cheers mate 😊

  10. Cream crackers also work well as an accompaniment to all types of chilli. Something I picked up from American buddies.
