31 Days of Healthy Recipes White Chicken Chili

White Chicken Chili

2 chicken breasts
2 cups water
1 Tbsp Better than Bouillon
4 cloves garlic
1 jalapeno sliced
1/2 diced onion
6 cups water
1 tsp bouillon
1 (15 oz) can great northern beans, drained
1 can diced green chilies
1 8 oz softened cream cheese
1 cup heavy cream
1 can Mexi Corn

You can use a rotisserie chicken instead otherwise:
1. Add chicken and water with bouillon or chicken broth, garlic cloves and jalapeno pepper if using to a soup pot. Being to a boil and cook until tender.
2. Remove chicken from pot, put cooking liquid in a measuring cup. Add diced onion to soup pot with desired cooking fat. Sauté until tender, add cooked garlic cloves and sliced jalapeños break them up.
3. Add water, bouillon, chicken, beans, green chiles cook for 20 min.
4. Add cream cheese, mexi corn and heavy cream simmer until cream cheese is dissolved. Before serving add pepperjack cheese stir until melted.
5. Serve with sour cream & chips
