*Malai Boti Handi Recipe*

Marination

– 800g boneless chicken, cut into pieces
– 1 tsp salt
– 1 tsp white pepper
– 1 tbsp ginger garlic paste
– 1 tbsp green chilli paste
– 1 tbsp roasted cumin powder
– 2 tbsp cream
– 3 tbsp yogurt

Mix well and marinate for 2 hours.

*Prepare gravy:*

– Sauté 2 medium onions, 1 tsp cumin, 2-3 cardamoms, 1 cinnamon stick, 2-3 cloves, and 15-18 soaked cashews until onions are soft.
– Cool and blend into a fine paste.

*Cook:*

1. Fry marinated chicken until cooked. Smoke with coal.
2. In a pan, add oil and the prepared paste. Add 1 tsp salt, 1 tsp coriander powder, 1 tsp cumin, 1/2 tsp black pepper, and 1 tsp white pepper. Mix well.
3. Add cooked chicken and mix.
4. Add a pinch of kasuri methi powder.
5. Top with cream and serve hot! 😋
