Burrito Bowl

High in protein, super easy to make and so delicious. The mince will last in the fridge for up to 3 days, also delicious to enjoy cold in reheat in a wrap the next day.

Makes 2 bowls
Per bowl:
396 kcals
43g protein

Beef mince
– 1 red onion
– 2 cloves garlic
– 250g mince meat (I used 5% fat)
– 2 tsp smoked paprika
– 1 tsp cumin
– 1/2 tsp chilli powder
– 1 tsp dried oregano
– 1 tin chopped tomatoes
– 1/2 lime

Avo smash
– 1 Avo
– 1 lime
– Salt and pepper

Build the bowl
– Shredded Ice burger lettuce
– 1 tbsp Sweet corn
– Handful Chopped cherry tomatoes
– Handful Grated cheddar cheese
– 1 tbsp Avo smash
– 1 tbsp Greek yoghurt
Garnish: fresh coriander, chilli flakes, sliced spring onion, lime wedge

Serve with some chilli heatwave @doritosuk

Dice the garlic and finely sliced the onion. Add the onion to a pan on a medium high heat with a little oil. Sautee for 5 minutes until soft. Add the beef and cook until it starts to brown off. Then add the garlic, spices and a good pinch of salt and cook for a further couple minutes. Turn the heat down slightly and add the chopped tomatoes and simmer for 20 minutes.

Add the avocado with a bowl with the juice of 1 lime, salt and pepper and mash until smooth.

Shred the lettuce and add the each bowl, add the beef mince, corn, sliced tomatoes, grated cheese, avo smash and Greek yogurt.

Top with fresh coriander, sliced spring onion, chilli flakes and an extra squeeze of lime.
