TEXAS Chili | 50 States, 50 Plates (Ep.2)



Welcome to 50 States, 50 Plates where we are exploring America one plate at a time! This week we are in Texas and we went with their official state food, Texas Chili. It did NOT disappoint!

Texas Chili Recipe:
Ingredients (Serves 8) (we made about half of this)
1 tablespoon olive oil
1 large yellow onion, chopped
3 jalapeƱos, chopped (remove seeds for less heat)
5 garlic cloves, minced
2.5 pounds ground beef (85% lean recommended for flavor)
1 1/2 teaspoons salt
1 teaspoon black pepper
4 tablespoons chili powder
1 tablespoon dried oregano
3 tablespoons ground cumin
1 teaspoon ground coriander
3 ounces tomato paste (about half a small can)
28 ounces canned diced tomatoes (with juices)
2 cups beef stock (add more if you prefer a thinner chili)

Instructions

Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the chopped onion and jalapeƱos, stirring occasionally until the onions are translucent, about 6-8 minutes.
Stir in the minced garlic and cook for 1 more minute until fragrant.
Add the ground beef, salt, and pepper. Break it up with a spoon as it cooks, leaving some larger chunks for texture. Cook for about 8 minutes until the beef is browned and no longer pink. If there’s excess grease, drain some off.
Sprinkle in the chili powder, oregano, cumin, and coriander. Stir well and cook for 1 minute to toast the spices.
Mix in the tomato paste, diced tomatoes with their juices, and beef stock. Bring everything to a simmer.
Reduce the heat to medium-low and let it cook for 30 minutes (or up to 1 hour for deeper flavor), stirring occasionally. The chili is ready when the liquid reduces to a thick, stew-like consistency. Adjust with more stock if it’s too thick for your liking.

  1. I have a question about the cornbread packets. I have difficulty with cornmeal choking me. Is this really fine cornmeal?

  2. I'm a no-beans person, but only because I don't digest them well. But I can get behind some Texas chili! I'm from Florida but have lived in several states and now settled in Kansas City! So I'm excited to see what you guys come up with in each of those states!

  3. My Friend lives in Flowery Mound, Texas which is near Dentin. She was raised in Ga. too. Her husband is from Oklahoma. He got a Job Transfer many years ago to Dallas, Texas.

  4. Yes it was "Lady Bird Johnson" that first started the don't litter the roads program, I hope I am saying this right!!!! as people thought nothing of tossing their trash on the roads.

  5. I moved to Texas in 1987 and so proud I knew where the campaign ā€œDon’t mess with Texasā€ came from lol
    But I love beans in my chili and no sugar in the cornbread. 😁

  6. Please when u get to Illinois, dont do deep dish. Mainly tourists eat that. Most people from il eat thin crust "tavern style " pizza

    I recommend you instead do italian beef, the revered chicago sandwich. (Currently more popular from the success of TV show, the Bear). Iconic italian beef

  8. I grew up not far from Earth Texas, in Lubbock area. For the record, I love pinto and kidney beans in my Chilli.

  9. I have a recipe for Texas chili that I've been making for more than twenty years. I actually still have the page I originally printed in 2002. It's called El Cid Chili, and it's on Food Network's website. It has ground beef, chorizo, and cubes of sirloin, along with tomatoes, jalapeƱos, spices, and a cinnamon stick. I make it because my husband dislikes beans, and it is amazing.

  11. Only time no beans is a chili dog. Rest of the time, chili with beans. That's all I've had is growing up with maple syrup and liquid smoke added. And a couple of packs of brown gravy mix.

  12. I've never had Texas chili with ground beef, only stew meat or chuck steak. It's delicious that way but ground beef is delicious too and more affordable. Learned something new today. It's great either way this time of year.

  13. I might have snorted my sweet tea. I have never … okay, rarely… made cornbread where it didn't stick somewhere. Therefore the hubby likes to make it and RARELY has stickage. Frankly, I like a little toupee. Apparently. And sir with the cowboy hat. Yes! I can't wait for you to do Tennessee. (And Alabama, Mississippi and Kentucky since all are parts of my army living lifestyle since I've lived everywhere from being an Army brat to having moved a lot in my life) Some might suggest "hot chicken" since that is the latest and greatest for TN but I would love to see some good old fashioned southern… chicken and dumplings anyone?

  14. Native Texan here and there’s never beans in competition chili but I personally like it both ways! Loving this new series!

  15. I have never heard of mesquite oaks, but there are lots of other oaks native to the state, and you are right, they can sure mess with your allergies. I know lots of Texans say no beans in the chili, but we always have beans in ours. I also like to top mine with cheese, sour cream and slices of avocado. Love that ours was your 2nd state, and look forward to your recipes for the other 48.

  16. I make a TexMex chili with small pieces of chuck roast as well as ground beef. The 2 textures make for an amazing chili. No beans in this one. It does have to get the slow cooker treatment due to the chuck. Also Mexican oregano is different from the Mediterranean one. You crumble it between your fingers as you add it. It makes a world of difference.

    Mandy, season that skillet! Yours did preheat with the butter in it but maybe not quire long enough. When you pour the batter in, it should sizzle right away. To get any stuck part out, add water to the cold skillet and let it heat on the stove. Rinse with hot water and dry very well. At that point season it and you're good to go.

  18. Oh my goodness, I was 10 years old when the Don't Mess with Texas slogan came out. It seemed like every commercial break on TV had one commercial for that slogan. I wasn't born here but I have lived here since I was 5 years old. As for the chili with or without beans. I have always put beans in my chili and instead of cumin I use smoked paprika. Really love this new series yall are doing. Fun fact I live about 55 minutes from denton in a small town called Bowie. Everything down here sets off some type of allergy. Lol.

  19. I always thought that texas chili had bedf chunks rather than ground beef. Not from Texas, never even been to Texas (I don't count a layover at the Houston airport) but i think I saw a recipe once.
