I have a smaller version of the bacon micro grill that I love – but it’s a little too small/too short. I’ll have to try the twisty trick. I see it all came out nice and crispy! I don’t love the texture of squishy bacon fat and sometimes I get it if I have to fold ends.
And I LOVE sour cream and cheese topping. The sour cream gives a nice cool contrast.

I love chili, especially my spicy chili. I use jalapeños, Serranos, habaneros, ghost pepper and Carolina reapers. I blend them with tomato sauce to make a spicy sauce and it’s so delicious. Definitely not for the faint of heart lol. Yours looks delicious.
I have to add that legumes/dried beans are actually keto-friendly! The body does not convert the carbs to sugar like bread, and they will not spike your sugar! I am never afraid to add dried black beans, pinto beans, or any dried bean to my lifestyle! I still maintain great blood work and weight loss while eating dried beans! This chili looks great, but I will use the black beans I have recently pressure canned to this instead of the wieners!
I was cooking lunch and listening to your video while my husband was watching. I kept asking, “Did he say he added Lil Smokies? Pork chops? Cinnamon?” WOW! I’ll probably include all the components you suggested except cilantro. I’ve tried & failed to like it. 😵💫 Otherwise, sounds great as usual! Thanks.

I've used a can of Eden black soy beans in chili. Hubby likes it.
Fun to watch, but that recipe would be mega $$$$ to make, plus Better than Bouillon or equivalent isnt available in NZ. A budget version would go down really well, pretty please 🙂

Brother. I’m so going to try this. I’ve made Jessica Merchant’s “Game Day Beer Chili” and loved it (as did all my fam). However, as good as it is, it does have 3 cans of beans. This looks equally great, and my doc just cleared me to eat more meat. Win win! (But Bo Nix broke his ankle 😡) 😂

Victor, I just made a version of your chili, then I took it a step further and took half of it, poured it over pasta (which I can't have), added spaghetti sauce, and shredded parm and made a dish for our church fellowship meal tomorrow.
I also made a cottage cheese chocolate pudding for dessert that I'll bring too.
I'm planning on making my own whipped cream for the pudding. I like to make that at the last few minutes. 🥰

Cook Culture on YT just did a video about cleaning up the enamel on cast iron, I think. They've been a great resource for cast iron and carbon steel maintenance/restoration.
My favorite chili hack was a friend suggesting that I add my raw garlic, onion and peppers to the raw meat and let that set in the fridge for a few hours before browning the meat with the veg – adds amazing flavor and moisture to the meat. I'm now going to add roasting my spices! I think that's the level up I've been looking for. Thanks so much! Great video!
