Vegetable Omelette Sandwich 🥪🍳
Quick and satisfying breakfast or anytime hunger 🥪, easily adjustable to your taste.

Ingredients (1 sandwich)
• 2 or 3 eggs
• 3 slices bread (white, whole wheat, or multigrain)
• 2 tbsp onion, finely chopped
• 2 tbsp tomato, finely chopped
• 2 tbsp capsicum/bell pepper, finely chopped
• 1–2 tbsp grated carrot or cabbage (optional)
• spices ( Red chilli, turmeric and coriander powder, Salt)
• Pepprika powder and oregano
• Green chillies or coriander
• 1–2 tsp oil or butter
• Optional spreads: butter, mayonnaise, green chutney, ketchup
• cheese slice or grated cheese

1️⃣In a bowl add all the vegetables and spices Beat the eggs with all veggies.
2️⃣Cook the omelette: Heat oil/butter in a pan on medium heat.
3️⃣Pour in the egg mixture and spread gently. Cook until set and lightly golden on both sides.
4️⃣Assemble: Spread butter/mayo/chutney on the bread. Place the omelette on one slice, add cheese if using, and cover with the other slices
5️⃣Toast the bread till lightly golden.
